1. Acetic acid is a bulk chemical product and one of the most important organic acids. It is mainly used in the production of vinyl acetate, acetic anhydride, acetates, and cellulose acetate, among others. Polyvinyl acetate can be used to prepare films and adhesives, and is also a raw material for vinylon synthetic fibers. Cellulose acetate can be used to manufacture rayon and motion picture films. Acetates are excellent solvents widely used in the paint industry.Acetic acid can also be used to synthesize acetic anhydride, diethyl malonate, ethyl acetoacetate, haloacetic acids, etc. It is used in the manufacture of pharmaceuticals such as aspirin, as well as in the production of acetates. It is widely applied in the pesticide, pharmaceutical, dye, photographic chemical, textile printing and dyeing, and rubber industries.
2. In the food industry, acetic acid is used as an acidulant, flavor enhancer, and flavoring agent. In the production of vinegar, acetic acid is diluted with water to a concentration of 4–5% and mixed with various condiments to form edible vinegar. As an acidulant, it can be suitably diluted and used in beverages, canned foods, etc., including canned tomatoes, asparagus, baby food, sardines, squid, soft drinks, cold drinks, confectionery, baked goods, puddings, gums, and condiments.
3. Acetic acid acts as a preservative. At a concentration of 1.5%, it exhibits significant bacteriostatic effects. Within 3%, it can prevent greening and darkening of meat color caused by mold spots.
